Strawberry-Charcoal Lemonade Popsicles

Ingredients

Strawberry Layer

  • 2 (10-ounce) packages frozen strawberrys
  • 1 cup cold water
  • ⅓ cup raw blue agave nectar
  • 1 tablespoon lemon zest plus ¾ cup lemon juice (freshly squeezed is best)

Charcoal Lemonade Layer

  • 1 cup cold water
  • ⅓ cup raw blue agave nectar
  • 2 tablespoons activated charcoal liquid
  • 1 tablespoon lemon zest plus ¾ cup lemon juice

Preparation

  1. Make the strawberry layer: Place the strawberries, water, agave, lemon zest, and lemon juice in a blender. Process until smooth and thick, about 10 seconds. Set aside.
  2. Make the charcoal lemonade layer: Whisk together the water, agave, charcoal liquid, lemon zest, and lemon juice in a small bowl until fully combined and inky black.
  3. Pour the strawberry layer about halfway up each popsicle mold (about 18 molds total). Slowly pour the charcoal lemonade layer on top. Insert the sticks into the molds.
  4. Freeze until fully chilled and solid, at least 8 hours or up to 24 hours.
  5. If using metal molds, let them thaw at room temperature for about 5 minutes before serving, or dip each mold into warm water for about 5 seconds to release. Store in the freezer for up to 2–3 weeks for best flavor and texture.
