- 2 cups full-fat cottage cheese
- 2 ⅓ cups self-rising flour, plus more if needed
- ¾ cup jarred marinara sauce
- ½ cup frozen veggies
- 3 cups shredded mozzarella cheese
- ¼ cup grated parmesan cheese
- ⅓ cup mini pepperoni slices

Preparation
- Preheat the oven to 450°F (230°C). Grease a 12 x 16-inch baking sheet with olive oil.
- In a blender or food processor, process the cottage cheese until smooth, stopping to scrape down the sides as needed.
- Transfer the blended cottage cheese to a large bowl. Add the self-rising flour. Knead until a smooth dough forms, 2–3 minutes, adding more flour as needed if the dough is too sticky.
- Transfer the dough to the prepared baking sheet. Using oiled hands, spread the dough evenly to the edges of the sheet.
- Bake in the preheated for 10–12 minutes, until slightly puffed and lightly browned on top.
- Meanwhile, process the marinara sauce and frozen veggies in a blender or food processor until completely smooth, stopping to scrape down the sides as needed.
- Spread a thin layer of the veggie sauce over the parbaked pizza crust to the crust edges. Top evenly with the mozzarella, Parmesan, and pepperoni.
- Return to the oven, and bake for 10–12 minutes, until the cheese is melted and bubbly with golden brown edges.
- Let cool slightly, about 5 minutes. Cut into squares, and serve.
