Ingredients

- 2 cups lukewarm water
- ½ tablespoon honey
- 1 teaspoon active dry yeast
- 4 ¾ cups plus 2 tablespoons all-purpose flour
- 1 tablespoon kosher salt
- ½ cup olive oil, divided, plus more for drizzling
- 1 cup pizza sauce
- ¼ cup grated parmesan cheese
- 8 oz fresh mozzarella cheese, sliced
- flaky sea salt, for sprinkling
- A handful of fresh basil leaves, torn if large

Preparation
- Whisk together the water, honey, and yeast in a medium bowl. Let stand for 5 minutes.
- Whisk together the flour and salt in a large bowl. Add the yeast mixture, stirring with a rubber spatula until all the flour is incorporated and you have a wet, shaggy dough.
- Place ¼ cup of the oil in a large bowl. Transfer the dough to this bowl, and flip the dough to coat with oil. Cover the bowl with plastic wrap, and refrigerate for 12 hours (or up to 2 days in advance).
- Tip the dough out of the bowl onto a 10 x 15-inch baking sheet. Rub the oil from the bowl onto the baking sheet, and press the dough out to fit the baking sheet with your hands. Let the dough proof at room temperature, uncovered, for about 2 hours, until doubled in size.
- Preheat the oven to 450°F (230°C).
- Drizzle the remaining ¼ cup oil over the focaccia. Using your fingertips, deeply dimple the dough all over. Bake the focaccia in the preheated oven for 20 minutes.
- Remove the focaccia from the oven, and spread the pizza sauce over the top. Sprinkle with the Parmesan cheese, and dot with the mozzarella cheese, tearing the slices if needed for even distribution.
- Return to the oven, and bake for about 10 minutes, until the cheese is melted and the dough is golden brown.
- Cut the pizza into squares. Garnish with a sprinkle of flaky salt and basil.
