Ingredients

for 6 servings

  • 3 cups vanilla bean whole-milk yogurt, divided
  • 1 (6-count) package of Thomas’® Cinnamon Swirl Bagels, split and lightly toasted
  • ½ cup unsalted butter, cubed
  • 1 ⅓ cups packed light brown sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon, plus more for dusting
  • 6 bananas, thinly sliced into rounds

Preparation

  1. Spread ¼ cup of the vanilla bean yogurt on each half of the toasted Thomas’® Cinnamon Swirl Bagels. Set aside.
  2. Melt the butter in a deep-sided skillet over medium heat, about 1 minute. Whisk in the brown sugar, vanilla, and cinnamon. Bring the mixture to a boil. Reduce the heat to medium-low, and simmer, stirring occasionally, for about 2 minutes.
  3. Stir in the bananas. Reduce the heat to low, and cook, stirring occasionally, until the bananas have softened, about 2 minutes. Remove from heat.
  4. Shingle the bananas evenly on the yogurt-coated sides of the bagels. Drizzle with any remaining syrup in the skillet, and dust with more cinnamon on top.
  5. Enjoy!
