Ingredients

Béchamel Sauce:
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 2 cups whole milk
- ⅛ teaspoon ground nutmeg
- dried bay leaf
- ¼ cup grated parmesan cheese
- ¼ cup grated gruyere cheese
- kosher salt, to taste
- black pepper, to taste

- 2 tablespoons canola oil
- 6 large eggs
- 6 (6-count) package Thomas'® Everything Bagels, split and toasted
- 12 thick-cut deli ham slices
- 2 ¼ cups grated gruyere cheese
- ½ cup chopped fresh chives

Preparation
- Make the béchamel sauce: Melt the butter in a small pot over medium heat. Whisk in the flour, and cook, whisking, until it slightly browns, about 1 minute. Whisk in the milk until no lumps remain. Whisk in the nutmeg and bay leaf, and allow to come to a simmer, about 6 minutes, stirring occasionally, until thickened enough to coat the back of a spoon evenly. Remove from heat, and whisk in the grated Parmesan and Gruyère. Season with salt and pepper to taste. Set aside.
- Heat the canola oil in a large skillet over medium-high heat. Cook the eggs, 2 at a time, in the hot oil until crisped around the edges but still wet on top, 2–3 minutes (they should not be fully cooked at this time). Remove the eggs from the skillet, and transfer to a plate. Set aside.
- Preheat the broiler with the oven rack in the middle position. Add about 2 tablespoons of the béchamel sauce to the bottom half of each toasted Thomas'® Everything Bagel. Layer each with 2 ham slices and 2 tablespoons Gruyère. Top each with the top half of the bagel, then top each with 3 tablespoons béchamel sauce and ¼ cup Gruyère.
- Arrange the assembled bagels on a broiler-safe baking sheet or skillet. Broil on high for about 2 minutes, until the cheese starts to brown. Top each bagel with a fried egg. Return to the oven, and broil for another 30–60 seconds, until the yolk is slightly firm. Sprinkle evenly with the chives, and serve.
