Ingredients

Blue Sour Drizzle:

  • ¼ cup white chocolate chips
  • ¾ teaspoon water
  • 2 tablespoons heavy whipping cream
  • 1 tablespoon sweetened condensed milk
  • ⅛ teaspoon to ¼ teaspoon citric acid, to taste
  • ¼ teaspoon blue spirulina powder

Pink Vanilla Mango Base:

  • 1 cup ice cubes
  • ¾ cup whole milk or milk of choice
  • 2 scoops vanilla ice cream (½ cup)s
  • 1 tablespoon mango syrup
  • 1 tablespoon dragonfruit powder (pitaya powder)

Topping:

  • Whipped cream (store-bought or homemade)
  • Dragonfruit powder or blue spirulina powder, for dusting (optional)

Preparation

  1. Make the blue sour drizzle: In a small microwaveable glass bowl (about 1-cup capacity), combine the white chocolate chips and water. Microwave on HIGH in 15-second intervals, stirring often with a small rubber spatula, until mostly melted, 30–45 seconds total. Stir in the whipping cream, condensed milk, citric acid, and blue spirulina powder until smooth and glossy. Taste and adjust sourness with more citric acid if desired. Set aside.
  2. Make the pink vanilla mango base: Blend the ice, milk, ice cream, mango syrup, and dragonfruit powder in a high-speed blender on high speed for 30–45 seconds, until completely smooth and thick.
  3. In a tall (about 16 ounces) clear glass, drizzle the blue sour drizzle along the inside walls using a piping bag or a small drizzle bottle for clean, even streaks. Pour the pink vanilla mango base directly into the prepared glass, allowing the blue drizzle to swirl and blend visually.
  4. Top with whipped cream and, if desired, a light dusting of dragonfruit powder or blue spirulina.
