Ingredients
for 22 cookies
Cookies:
- ½ cup unsalted butter, softened
- ½ cup vegetable oil
- ½ cup granulated sugar
- ½ cup powdered sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon kosher salt
- 1 chai tea bag
Icing:
- 1 ½ cups powdered sugar
- ¼ cup 2% milk
- ¼ teaspoon ground nutmeg

Preparation
- Make the cookies: Preheat the oven to 350°F (180°C). Line 2 baking sheets with parchment paper; set aside.
- In a large bowl, whisk together the butter and vegetable oil until smooth, 3–5 minutes (alternatively, you may beat using an electric mixer).
- Add the granulated sugar, powdered sugar, egg, and vanilla extract, and whisk or beat until combined.
- Stir in the flour, baking soda, salt, and the contents of the tea bag until fully incorporated.
- Cover the bowl with plastic wrap. Chill in the refrigerator for 1 hour.
- Remove the dough from the refrigerator, and unwrap. Using a small cookie scoop or your hands, roll the dough into 22 small balls.
- Arrange the dough balls 2 inches apart on the prepared baking sheets. Press down gently on each ball with your hand or a cup.
- Working in 2 batches, bake each baking sheet for 10 minutes. Immediately transfer to a cooling rack, and let cool for 10 minutes.
- While the cookies cool, make the icing: Whisk together the powdered sugar, milk, and nutmeg in a small bowl until smooth.
- Drizzle or spread your desired amount of icing over the cooled cookies. Let dry until the icing is set, at least 1 or up to 4 hours. Serve. Store the cookies in an airtight container at room temperature for up to 4 days.
