  • 1 tablespoon baking powder
  • 2 tablespoons sugar

  • 2 large eggs, separated
  • 2 cups whole milk
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract

Preparation

  1. Preheat an oven to 200°F. In a large bowl, whisk together the flour, cornstarch, baking powder, sugar, salt, cinnamon, and nutmeg. Set aside.
  2. In a medium bowl, whisk together the egg yolks, milk, oil, and vanilla. In a separate medium bowl, beat the egg whites with an electric hand mixer on low speed for 3–5 minutes, until stiff peaks form. Set aside.
  3. Add the egg yolk mixture to the flour mixture, and use a whisk to incorporate everything, being careful not to overmix. Using a rubber spatula, fold in the egg white mixture. Set the batter aside.
  4. Preheat a Belgian waffle iron for about 5 minutes, or until the light turns green. Coat the inside of the iron with cooking spray. Using a ¾-cup scoop, scoop the batter onto your hot waffle iron. Cook 2–3 minutes, or according to the manufacturer's directions. Transfer the cooked waffle to an oven-safe write rack set over a baking sheet, and place in the oven to keep warm. Repeat the process with the remaining waffle batter.
  5. Serve waffles with butter, syrup, powdered sugar, or any other favorite toppings.
