Takis-Style Powder

  • ½ cup kosher salt
  • ⅓ cup cayenne pepper
  • 2 tablespoons chili powder
  • 2 tablespoons citric acid
  • 2 tablespoons paprika
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 3 teaspoons granulated sugar
  • 2 teaspoons habanero powder, optional

Takis-Style Chicken Fries

  • 1 lb boneless, skinless chicken breast
  • 3 large eggs, beaten
  • 1 ½ cups italian bread crumbs, divided
  • 1 tablespoon Takis-style powder, plus more for dusting
  • ½ cup all purpose flour
  • nonstick cooking spray
  • Ranch dressing, lime crema, or other dipping sauce, for dipping

Preparation

  1. Make the Takis-style powder: Whisk together all ingredients in a bowl until evenly mixed. Taste a small pinch, and adjust the spice, salt, or tanginess to your preference.
  2. Store in an airtight jar or spice container in a cool, dry place for up to 3 months.
  3. Make the Takis-style chicken fries: Place the chicken, 1 of the eggs, ½ cup of the bread crumbs, and 1 tablespoon of the Takis-style powder in a blender or food processor. Pulse for 30–60 seconds, until the mixture is smooth and paste-like, stopping to scrape down the sides as needed.
  4. Transfer the mixture to a piping bag (or large zip-top bag with the corner snipped). Pipe it into fry-sized strips, about 4–5 inches long, on a parchment paper-lined baking sheet.
  5. Freeze for 25–30 minutes, until the chicken fries firm up.
  6. Set up a breading station with 3 shallow bowls: 1 with the flour, 1 with the remaining 2 eggs, and 1 with the remaining 1 cup bread crumbs. Dredge each chilled chicken fry in the flour, then dip into the egg, then coat thoroughly in the bread crumbs. Return to the baking sheet.
  7. Lightly coat both sides of each chicken fry with cooking spray.
  8. Preheat an air fryer to 400°F (200°C). Add the chicken fries to the air-fryer basket, and cook for about 12 minutes, flipping halfway through, until golden brown and a thermometer inserted into each chicken fry registers 165°F.
  9. While still hot, toss the chicken fries in an addtional 1–2 tablespoons Takis-style powder for maximum flavor. Serve hot with ranch, lime crema, or your favorite dipping sauce.
