  • 2 large eggs
  • 1 cup warm water (80°F–95°F [25°C–35°C])
  • ½ tablespoon chicken bouillon
  • 1 teaspoon white pepper
  • 2 teaspoons soy sauce
  • 2 teaspoons chili oil
  • 1 teaspoon sesame oil
  • 1 scallion (green part only), sliced

Preparation

  1. Fill a pot one-third of the way up the sides with tap water. Bring the water to a boil. Carefully insert a steamer basket, and cover with the lid.
  2. In a bowl, whisk together the eggs, 1 cup warm water, chicken bouillon, and white pepper.
  3. Pour the whisked mixture through a strainer into a heatproof bowl that fits inside the steamer.
  4. Carefully skim out and discard the bubbles on top of the eggs. Cover the bowl with plastic wrap.
  5. Place the bowl in the steamer and steam covered for about 15 minutes, or until the egg is puffy but still jiggly.
  6. Serve immediately with soy sauce, chili oil, sesame oil, and scallion.
