- 6.5 oz soba noodles
- ½ cup light soy sauce
- ½ cup dashi
- ½ cup water
- 3 tablespoons dried bonito flakes
- 1 tablespoon mirin
- ¼ cup ice cubes
- 3 tablespoons grated radish
- 1 teaspoon lemon juice
- 1 teaspoon wasabi
- 2 scallions, sliced

Preparation
- Cook your noodles according to package instructions. Transfer the cooked noodles to an ice bath, and let cool down for about 1 minute. Drain, and set aside.
- Place the soy sauce, dashi, water, bonito flakes, and mirin in a small pot. Bring to a simmer over low heat. Cook for 5–7 minutes, until the mixture is fragrant. Pour the mixture through a sieve into a heatproof bowl. Discard the bonito flakes.
- Add about ½ cup of the strained mixture to a bowl. Add the ice cubes, radish, lemon juice, wasabi, and scallions. Add more or less of any ingredients to taste. Serve with the soba noodles.
