Ingredients

for 8 servings

Snowman:

  • 1 (16-ounce) Brie cheese wheel
  • 1 (7-ounce) Brie cheese wheel
  • 2 prosciutto slices
  • 3 fresh blueberries, cut in half crosswise, divided
  • 1 baby carrot, cut in half lengthwise
  • 3 raisins
  • 1 Town House® Pretzel FlipSides® Cracker
  • 1 (2-inch) peppered salami log

Platter:

  • 1 ½ cups Town House® Snowmen Crackers
  • 1 cucumber, sliced
  • 1 bunch red seedless grapes
  • 4 oz salami, sliced
  • ⅓ cup cranberry sauce
  • 1 ½ cups Town House® Pretzel FlipSides® Crackers
  • 1 cup fresh raspberries
  • 1 cup fresh blackberries
  • 1 green apple, sliced
  • 1 (5-ounce) package prosciutto-wrapped mozzarella cheese
  • 1 cup fresh strawberries, halved lengthwise
  • 1 (6-ounce) herbed goat cheese log
  • 1 oz cheddar cheese stars
  • 1 orange, halved crosswise
  • ¼ cup shelled pistachios
  • 2 sprigs fresh rosemary

Preparation

  1. Make the snowman: Place the 16-ounce Brie wheel on a clean work surface. Place a 4-inch round cookie cutter on the top edge of the Brie wheel, about 1 inch down from the top-most edge of the wheel. Press down on the cookie cutter to remove that portion of the cheese. (Reserve the removed cheese portion for another use.) Nestle the 7-ounce Brie wheel inside the cutout portion of the larger wheel to form the 2 parts of the snowman's body.
  2. Wrap the prosciutto slices around the “neck” to create a scarf. For the face, use 2 of the halved blueberries for the eyes, 1 of the baby carrot halves (discard the remaining half) for the nose, and the raisins for the mouth. Place the remaining blueberry halves down the body for buttons.
  3. For the hat, place a Town House® Pretzel FlipSides® Cracker at the top of the head for the brim, then set the peppered salami log on top.
  4. Make the platter: Arrange the Town House® Snowmen Crackers around the board or platter, then fill in the gaps with your choice of accompaniments.
  5. Serve immediately, or refrigerate for up to 2 hours before serving.
