Preparation
- In a medium glass or ceramic bowl, combine the coconut water and magnesium powder. Stir until fully dissolved. Add the cherry juice, and mix well.
- Sprinkle the gelatin evenly over the liquid. Let it bloom for 2–3 minutes, until the mixture thickens.
- Transfer the mixture to a small nonstick saucepan. Cook over low heat, stirring occasionally, for 2–3 minutes, until the gelatin is fully dissolved. Do not boil.
- Remove from heat, and let the mixture cool for 5 minutes. (The foam on top will dissipate on its own.)
- Pour the liquid into a silicone mold (11.7 x 7.6 x 0.6 inches) or a small glass container. Refrigerate for at least 2 hours or up to overnight, until firm.
- Remove the gummies from the molds, or slice into bite-sized pieces if using a container.
- Store in an airtight container in the refrigerator for up to 2 weeks.
- To use: Take 1–2 gummies 30 minutes before bed for relaxation and improved sleep.
- Enjoy!
