Ingredients

- 3 (1 pound total) gold potatoes, peeled and cut into quarters
- 2 teaspoons kosher salt, plus more to taste
- 1 cup all-purpose flour, plus more for kneading
- 2 teaspoons baking powder
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- ½ teaspoon dried red pepper flakes
- freshly ground black pepper, to taste
- 2 cups shredded mozzarella cheese
- 1 tablespoon avocado oil
- Herb butter, optional
Preparation
- Place the potatoes in a large pot, and cover with water. Add the salt. Bring to a boil over high heat. Cook for about 20 minutes, or until the potatoes are fork-tender. Drain completely. Let cool for 10–15 minutes, until the potatoes are easy to handle.
- Place the flour, baking powder, garlic powder, onion powder, red pepper flakes, and salt and black pepper to taste in a medium bowl. Whisk to combine.
- Using a potato masher or ricer, mash the potatoes into the flour mixture. Transfer the mixture to a lightly floured work surface, and knead until well incorporated. Shape into a ball.
- Dust the dough ball with flour, and divide it into 4 equal portions. Using a rolling pin, roll each portion into a 6-inch round. Place ½ cup cheese on the center of each dough round, then fold the dough over to fully enclose the cheese. Dust with more flour, and flatten with a rolling pin, rolling each piece back into a 6-inch round.
- Heat a large skillet over medium heat, and add the avocado oil. Working with 1 flatbread at a time, cook the flatbreads in the skillet for about 3 minutes per side, or until golden brown. Remove each flatbread from the skillet, and immediately brush with the herb butter. Serve.
