  • ¼ lb uncured pancetta, chopped
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 3 tablespoons tomato paste
  • 2 russet potatoes, peeled and chopped
  • 2 cups chicken stock
  • 1 cup water
  • 1 teaspoon kosher salt
  • ½ lb assorted pasta or ditalini
  • ½ cup grated parmesan cheese
  • 2 tablespoons Chopped fresh parsley

Preparation

  1. Place the pancetta in a large saucepan. Cook over medium, stirring occasionally, until golden brown, about 8 minutes.
  2. Add the onion to the pancetta in the pan. Cook, stirring occasionally, until soft, about 5 minutes. Stir in the garlic. Cook, stirring occasionally, until fragrant, about 2 minutes.
  3. Stir the tomato paste into the onion mixture in the pan, and cook, undisturbed, for 3 minutes. Stir in the potatoes until well coated. Pour in the stock, water, and salt, and bring to a simmer over medium. Reduce the heat to medium-low. Cover and simmer until fork-tender, about 20 minutes, uncovering to stir occasionally to prevent the potatoes from sticking.
  4. Add the pasta to the potato mixture in the pan, and stir well to combine. Simmer over medium-low, uncovered, for 15 minutes, stirring often to prevent the pasta from sticking. Stir in the Parmesan and parsley, and serve.
