Ingredients

- ¼ lb uncured pancetta, chopped
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 3 tablespoons tomato paste
- 2 russet potatoes, peeled and chopped
- 2 cups chicken stock
- 1 cup water
- 1 teaspoon kosher salt
- ½ lb assorted pasta or ditalini
- ½ cup grated parmesan cheese
- 2 tablespoons Chopped fresh parsley

Preparation
- Place the pancetta in a large saucepan. Cook over medium, stirring occasionally, until golden brown, about 8 minutes.
- Add the onion to the pancetta in the pan. Cook, stirring occasionally, until soft, about 5 minutes. Stir in the garlic. Cook, stirring occasionally, until fragrant, about 2 minutes.
- Stir the tomato paste into the onion mixture in the pan, and cook, undisturbed, for 3 minutes. Stir in the potatoes until well coated. Pour in the stock, water, and salt, and bring to a simmer over medium. Reduce the heat to medium-low. Cover and simmer until fork-tender, about 20 minutes, uncovering to stir occasionally to prevent the potatoes from sticking.
- Add the pasta to the potato mixture in the pan, and stir well to combine. Simmer over medium-low, uncovered, for 15 minutes, stirring often to prevent the pasta from sticking. Stir in the Parmesan and parsley, and serve.
