  • 3 tablespoons chocolate chips
  • ½ teaspoon refined coconut oil
  • 1 (5-ounce) package chocolate-dipped butter cookies (from Trader Joe’s or similar)
  • 1 (3-ounce) package waffle cone tip cookie
  • sprinkles, for decorating

Preparation

  1. Line a baking sheet or cutting board with parchment paper, and set aside.
  2. Place the chocolate chips and coconut oil in a small microwaveable bowl. Microwave on HIGH until the mixture is smooth and melted, 40–50 seconds total, stopping to stir every 15–20 seconds. (Alternatively, you can melt the mixture in a small saucepan on the stovetop over low heat, stirring often, until melted, about 5 minutes.)
  3. Arrange the chocolate cookies evenly on the prepared baking sheet to make the hat brims. Spoon or pipe a small dollop (about ½ teaspoon) of melted chocolate onto the center of each cookie. Press a waffle cone tip cookie on top of each cookie to form the pointed hat. Add sprinkles to the melted chocolate around the base of each cone to create a hat band.
  4. Let the cookies stand at room temperature until the chocolate sets, about 20 minutes. (Alternatively, you can chill them in the refrigerator for about 10 minutes.)
