Ingredients
for 5 servings
- 2 ½ lb boneless pork butt or pork shoulder
- kosher salt, to taste
- ¼ cup neutral cooking oil (such as canola, vegetable, or avocado)
- ¼ cup unsweetened coconut milk
- ¼ cup chopped fresh cilantro stems
- 2 tablespoons soy sauce
- 2 tablespoons water
- 1 tablespoon dark soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon dark brown sugar (or palm sugar)
- 2 teaspoons fish sauce
- ¼ teaspoon ground white pepper
- 5 garlic cloves
- chopped fresh cilantro, for serving
- Cooked white sushi rice, for serving

Preparation
- Cut the pork into ¼-inch-thick strips, about 3 inches long, preferably against the grain. Thickness is more important than length, so it's fine if the pieces are slightly longer or shorter. Place the sliced pork in a large bowl, and season with a generous pinch of kosher salt. Set aside.
- Place the oil, coconut milk, cilantro stems, soy sauce, dark soy sauce, oyster sauce, brown sugar, fish sauce, white pepper, garlic, and water in a blender. Process until smooth, about 15 seconds.
- Pour the marinade over the pork, and mix well to coat. Cover the bowl with plastic wrap, and marinate in the refrigerator for at least 3 hours or up to 12 hours.
- While the pork is marinating, soak 10 wooden skewers in water. This can also be done overnight.
- Ribbon 2–3 pieces of the marinated pork onto each skewer, folding the meat back and forth as you go. The folds of pork should be touching but not tight.
- Preheat a grill to 500°F (260°C). Once hot, place the skewers directly on unoiled grill grates. Close the lid and cook for about 15 minutes, or until the internal temperature reaches at least 145°F (63°C), rotating the skewers every 5 minutes. Let pork rest about 5 minutes. Serve with fresh cilantro and cooked rice.
