Ingredients
for 4 servings
Chicken:
- 2 teaspoons kosher salt
- 2 teaspoons baking powder
- 1 teaspoon lemon pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 lb chicken wings
- cooking spray
Garlic-Parmesan Sauce:
- 8 tablespoons unsalted butter
- 6 garlic cloves, minced
- ⅓ cup grated parmesan cheese
- 2 tablespoons mayonnaise
- 1 tablespoon water
- ½ tablespoon lemon pepper
- Juice of 1 lemon
- Pinch of kosher salt
Additional Ingredients:
- minced fresh chive, for garnish
Preparation
- Make the chicken: Whisk together the salt, baking powder, lemon pepper, garlic powder, and onion powder in a small bowl. Add the wings, and toss until evenly coated. Transfer the wings to a wire rack, and refrigerate, uncovered, for at least 12 hours or up to 24 hours, until the wings look dry on the surface.
- Preheat the oven to 425°F (220°C). Place a wire rack on a baking sheet. Coat the rack with cooking spray.
- Arrange the wings in a single layer on the prepared wire rack. Roast until the wings turn golden brown and crispy, and the internal temperature registers 165°F, 35–40 minutes, flipping halfway through.
- Make the garlic-Parmesan sauce: Melt the butter in a small saucepan over medium heat. Add the garlic, and cook, stirring often, until the garlic is fragrant and softened, 2–3 minutes. Remove from heat, and transfer to a large bowl. Whisk in the Parmesan, mayonnaise, water, lemon pepper, lemon juice, and salt until smooth and glossy.
- Add the wings to the bowl with the sauce, and toss until the wings are evenly coated.
- Transfer to a serving platter, and garnish with the chives.
