Ingredients

- 4 large oranges, zested and segmented, divided
- 4 large grapefruits, zested and segmented, divided
- ¼ cup granulated sugar
- 6 (6-count) packages of Thomas® Light multi-grain English Muffins, split and lightly toasted
- 3 (8-ounce) mascarpone cheese containers
- ½ cup heavy whipping cream
- ¼ cup honey, plus more for drizzling
- 1 cup shelled pistachios, chopped

Preparation
- Gently toss together the orange segments, grapefruit segments, and sugar in a medium bowl. Set aside until a syrup is made from the juices of the citrus, about 10 minutes.
- Meanwhile, using a hand mixer, beat the mascarpone, whipping cream, and honey in a bowl on medium speed until light and fluffy, about 3 minutes.
- Spread 2–3 tablespoons of the mascarpone mixture over the cut side of each toasted Thomas® Light Multi-Grain English Muffin half. Top evenly with the macerated segmented citrus and pistachios. Add a drizzle of honey. Sprinkle with the reserved citrus zests.
