Ingredients
for 4 servings
- 1 ½ lb ground beef (650 g)
- 2 tablespoons taco seasoning
- 1 bag gluten-free tortilla chips
- 2 cups shredded cheddar cheese (400 g)
- 4 roma tomatoes, chopped
- 1 red onion, chopped
- 2 large avocados, sliced
- ½ cup green onion (20 g), chopped
- 1 cup sour cream (245 g), optional

Preparation
- Set smoker to 300°F. Place beef in a cast iron skillet and brown in a smoker. Once browned, add taco seasoning. Then, remove beef from the skillet and set aside and set the smoker to 225°F.
- Line skillet with a layer of chips, cheese, meat, tomatoes and onion. Then, repeat these steps until the skillet is full. Top skillet with remaining cheese.
- Smoke at 225° for 10 minutes. Then, set the smoker to 400° and cook until the cheese is golden brown.
- Take the skillet off of the smoker and top with avocado, green onion, and tomato.
- Serve topped with dollops of sour cream.
