Gluten-Free Smoked Loaded Nachos

Ingredients

for 4 servings

  • 1 ½ lb ground beef (650 g)
  • 2 tablespoons taco seasoning
  • 1 bag gluten-free tortilla chips
  • 2 cups shredded cheddar cheese (400 g)
  • 4 roma tomatoes, chopped
  • 1 red onion, chopped
  • 2 large avocados, sliced
  • ½ cup green onion (20 g), chopped
  • 1 cup sour cream (245 g), optional

Preparation

  1. Set smoker to 300°F. Place beef in a cast iron skillet and brown in a smoker. Once browned, add taco seasoning. Then, remove beef from the skillet and set aside and set the smoker to 225°F.
  2. Line skillet with a layer of chips, cheese, meat, tomatoes and onion. Then, repeat these steps until the skillet is full. Top skillet with remaining cheese.
  3. Smoke at 225° for 10 minutes. Then, set the smoker to 400° and cook until the cheese is golden brown.
  4. Take the skillet off of the smoker and top with avocado, green onion, and tomato.
  5. Serve topped with dollops of sour cream.
