Ingredients

Dressing:

  • 3 tablespoons toasted sesame oil
  • 2 tablespoons soy sauce
  • 2 tablespoons rice wine vinegar
  • ½ tablespoon honey
  • 1 garlic clove, grated

Garlic Chips:

  • ½ cup canola oil
  • 6 garlic cloves, thinly sliced
  • kosher salt, to taste

Salad:

  • 6 cups chopped romaine lettuce
  • 1 ½ cups shredded cooked chicken breast
  • ½ cup shredded carrots
  • ½ cup fried wonton strips
  • 2 tablespoons pickled ginger, chopped
  • 2 tablespoons salted cashews, coarsely chopped
  • 1 avocado, diced
  • 1 scallion, thinly sliced

Preparation

  1. Make the dressing: Whisk together the sesame oil, soy sauce, vinegar, honey, and garlic in a small bowl until smooth. Set aside.
  2. Make the garlic chips: Heat the oil in a small skillet over medium until hot. Add the garlic, and cook, stirring often, until golden brown and crisp, about 2 minutes. Remove from heat. Using a slotted spoon, transfer the garlic to a paper towel-lined plate. Season with a pinch of salt, and let cool slightly, 3–4 minutes.
  3. Make the salad: Place the lettuce, chicken, carrots, wonton strips, ginger, cashews, avocado, scallion, and fried garlic chips in a large bowl. Drizzle with the dressing, and toss gently to coat.
  4. Divide the salad evenly between 2 bowls, and serve immediately.
