Dressing:
- 3 tablespoons toasted sesame oil
- 2 tablespoons soy sauce
- 2 tablespoons rice wine vinegar
- ½ tablespoon honey
- 1 garlic clove, grated
Garlic Chips:
- ½ cup canola oil
- 6 garlic cloves, thinly sliced

Salad:
- 6 cups chopped romaine lettuce
- 1 ½ cups shredded cooked chicken breast
- ½ cup shredded carrots
- ½ cup fried wonton strips
- 2 tablespoons pickled ginger, chopped
- 2 tablespoons salted cashews, coarsely chopped
- 1 avocado, diced
- 1 scallion, thinly sliced

Preparation
- Make the dressing: Whisk together the sesame oil, soy sauce, vinegar, honey, and garlic in a small bowl until smooth. Set aside.
- Make the garlic chips: Heat the oil in a small skillet over medium until hot. Add the garlic, and cook, stirring often, until golden brown and crisp, about 2 minutes. Remove from heat. Using a slotted spoon, transfer the garlic to a paper towel-lined plate. Season with a pinch of salt, and let cool slightly, 3–4 minutes.
- Make the salad: Place the lettuce, chicken, carrots, wonton strips, ginger, cashews, avocado, scallion, and fried garlic chips in a large bowl. Drizzle with the dressing, and toss gently to coat.
- Divide the salad evenly between 2 bowls, and serve immediately.
