Ingredients

  • 1 lb brown rice pasta
  • 2 tablespoons olive oil
  • 1 small yellow onion, diced
  • 1 large zucchini, grated
  • 3 garlic cloves, minced
  • 1 lb ground turkey
  • ½ teaspoon italian seasoning
  • ½ teaspoon red pepper flakes
  • kosher salt, to taste
  • 1 (32-ounce) jar no-sugar-added marinara sauce
  • ¼ cup grated parmesan cheese
  • fresh basil, for garnish

Preparation

  1. Bring a large pot of salted water to a boil over high heat. Add the pasta, and cook according to package directions. Drain and set aside.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the onion, and cook, stirring occasionally, until softened, 5–7 minutes.
  3. Stir in the zucchini and garlic. Cook, stirring often, until the liquid in the skillet has evaporated, the mixture is reduced and jammy, and the zucchini is softened and almost melted into the mixture, 7–10 minutes.
  4. Add the turkey, Italian seasoning, red pepper flakes, and a pinch of salt. Cook, breaking it up with a spoon as it cooks, until the meat is browned and fully cooked through, about 5 minutes.
  5. Pour in the marinara sauce, and bring to a simmer over medium heat. Simmer, stirring occasionally, for about 5 minutes, until the flavors meld.
  6. Serve your desired amount of marinara mixture over the cooked pasta. Sprinkle bowls with the Parmesan, and garnish with basil.
