Ingredients
for 4 servings
- 1 cup fresh or frozen blueberries
- ¾ cup water
- ½ cup granulated sugar, or to taste
- 2 teaspoons lemon zest, plus 2 tablespoons lemon juice (from 1 lemon), divided
- ½ teaspoon vanilla extract
- 3 tablespoons heavy whipping cream
- 2 tablespoons half-and-half
- 4 cups ice cubes
- 2 cups whole milk
- Brewed coffee or matcha, to taste

Preparation
- Stir together the blueberries, water, sugar, and lemon zest in a small saucepan. Bring to a gentle boil over medium heat, stirring occasionally and gently mashing the blueberries with a spoon as they soften.
- Reduce the heat to a simmer. Simmer, stirring occasionally, for 10–15 minutes, until the syrup thickens slightly and the berries burst.
- Remove the blueberry mixture from heat, and pour through a fine mesh strainer into a bowl or jar, pressing on the solids to extract all the liquid. Discard the solids (or save for yogurt or oatmeal!). Stir the lemon juice and vanilla into the syrup. Let cool for 1 hour.
- Place the whipping cream, half-and-half, and 3 tablespoons of the cooled blueberry syrup in a lidded jar. Seal the jar, and shake for about 5 minutes, or until the cream has thickened and become stiffer.
- For each drink, layer 3 tablespoons of the blueberry syrup in a standard 16-ounce mason jar. Add 1 cup of ice, then pour in ½ cup of milk and your desired amount of brewed coffee or matcha. Top each with 3 tablespoons of the cold foam. Serve immediately.
