Muffins:
- cooking spray
- 2 cups all-purpose flour
- ½ cup sugar
- 2 teaspoons baking powder
- 1 teaspoon kosher salt
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 2 large eggs, lightly beaten
- 1 cup whole milk
- ½ cup unsalted butter, melted
Topping:
- ½ cup unsalted butter, melted
- ½ cup sugar
- 1 teaspoon ground cinnamon
- Milk, coffee, or hot chocolate, for serving (optional)

Preparation
- Make the muffins: Preheat the oven to 350°F (180°C). Coat a standard size 12-cup muffin tray with cooking spray. Set aside.
- Stir together the flour, sugar, baking powder, salt, cinnamon, and nutmeg in a medium bowl. Set aside.
- Whisk together the eggs, milk, and butter in a separate bowl until smooth. Add the egg mixture mixture to the flour mixture, and whisk together until just combined, taking care not to overmix. Divide the batter evenly among the muffin cups.
- Bake until a toothpick inserted into the muffins comes out clean, 18–20 minutes. Let the muffins cool in the muffin tray for 5 minutes, then transfer them to a wire rack, and let cool until slightly warm, 20–30 minutes. This will help the coating adhere.
- Make the topping: Pour the melted butter into a shallow dish. Stir together the sugar and cinnamon in a second shallow dish.
- Working with 1 at a time, roll the muffins in the melted butter, then in the cinnamon-sugar mixture.
- Serve with milk, coffee, hot chocolate, etc! Muffins can be stored in an airtight container at room temperature for up to 3 days.
