Ingredients

- 2 cups hot water
- 3 tablespoons instant espresso powder
- ½ cup tap water
- 3 tablespoons sugar
- 1 tablespoon agar agar powder
- 1 cup whole milk
- 2 teaspoons simple syrup, or to taste

Preparation
- Whisk together the hot water and instant espresso in a medium pot until completely combined. Whisk in the tap water, sugar, and agar powder until combined.
- Bring the mixture to a gentle simmer over medium heat, stirring gently. Let it simmer, undisturbed, for 5 minutes.
- Immediately pour the mixture onto a baking sheet (about 8x10 inches). Let cool for 20 minutes. Cover and refrigerate until jelly-like, at least 4 hours or up to 12 hours. Store in the fridge for up to 3 days.
- Stir together the milk and simple syrup in a pitcher (feel free to add more or less of the simple syrup to taste).
- Slice the jelly into bite-sized pieces. Divide it evenly among 4 serving glasses. Pour the milk mixture on top, and serve.
