- 2 lemons, divided
- 1 lb boneless, skinless cod (3 to 4 fillets)
- kosher salt, to taste
- black pepper, to taste
- 8 garlic cloves
- 2 fresh red thai chiles
- 1 (2-inch) piece fresh peeled ginger
- 1 tablespoon olive oil
- 1 cup full-fat coconut milk
- 1 tablespoon honey
- 1 tablespoon fresh dill
- Cooked jasmine rice or steamed vegetable, for serving

Preparation
- Cut 1 of the lemons into 6 round slices; set aside. Grate the zest from the remaining lemon, and set aside. Squeeze the juice from one-half of the zested lemon, and set aside.
- Pat the cod fillets dry. Season both sides with salt and pepper. Set aside.
- Place the garlic, chiles, and ginger in a mortar. Smash with the pestle or a heavy spoon until the mixture is in uniform chunky pieces.
- Heat the oil in a large skillet over medium-high heat. Add the garlic mixture, and cook, stirring often, until fragrant, 1–2 minutes.
- Top the mixture in the skillet evenly with the lemon slices, then with the cod. Add the coconut milk, honey, and reserved lemon zest and lemon juice. Stir and bring to a gentle simmer over medium heat. Spoon the coconut milk mixture over the fish, and cover the skillet. Simmer for 6–8 minutes, until the fish flakes easily with a fork.
- Taste the sauce, and adjust the lemon juice or salt if needed. Sprinkle with the dill, and serve hot over rice or steamed greens.
