Ingredients

  • 14 round butter crackers
  • 8 oz cream cheese (225 g)
  • ½ cup pecan pieces (60 g)
  • ½ cup apricot jam (150 g)
  • 1 chipotle pepper in adobo
  • fresh rosemary, or thyme leaves, for garnish

Preparation

  1. Arrange the crackers in a single layer on a serving platter.
  2. Cut the cream cheese into 14 pieces, then roll each piece into a ball.
  3. Add the pecan pieces to a shallow bowl, then roll the cream cheese balls in the pecans to cover completely, pressing the nuts into the cream cheese. Place each ball on top of a cracker.
  4. In a small bowl, add the apricot jam. Finely chop the chipotle peppers, then add to the jam and stir to incorporate.
  5. Spoon the chipotle-apricot jelly on top of each cream cheese ball. If desired, garnish with a few rosemary leaves.
  6. Serve immediately.
