Blueberry And Lemon Cake

Ingredients

for 8 servings

  • 1 cup butter (225 g)
  • 1 cup caster sugar (225 g)
  • 4 eggs
  • 2 cups self-raising flour (250 g)
  • 1 lemon, grated rind
  • 1 ¼ cups blueberry (200 g)
  • 1 lemon, juiced

Preparation

  1. Preheat the oven to 180’C /350’F and grease a cake tin.
  2. Put butter and sugar in a big bowl and mix until light and creamy. Gradually add the eggs and the flour a little at a time. Then add the lemon juice and mix well.
  3. Fold in the blueberries and transfer the mixture into the prepared cake tin. Smooth the mixture out.
  4. Bake for about 1 hour, or until risen and golden and a fork comes out clean.
  5. Transfer the cake to a wire wrack and leave to cool. Once cool, top and decorate as desired.
  6. Serve.
