Ingredients

Cowboy Butter:

  • 8 tablespoons unsalted butter
  • 3 garlic cloves, grated
  • 1 tablespoon finely minced fresh parsley
  • 1 tablespoon finely minced fresh chives
  • 1 teaspoon paprika
  • 1 teaspoon dijon mustard
  • 1 teaspoon worcestershire sauce
  • 1 teaspoon kosher salt
  • ¼ teaspoon cayenne pepper
  • Zest and juice of ½ lemon

Steak:

  • 1 ½ lb New York strip steak (1½ inches thick)
  • ½ tablespoon steak spice rub
  • 1 tablespoon avocado oil

Preparation

  1. Preheat an air fryer to 450°F (230°C) for 10 minutes.
  2. Meanwhile, make the cowboy butter: Melt the butter in a small skillet over low heat. Add the garlic. Cook, stirring often, until fragrant, about 1 minute. Remove from heat, and pour into a heatsafe bowl. Let cool for 5 minutes. Whisk in the parsley, chives, paprika, mustard, Worcestershire, salt, cayenne, and lemon zest and juice. Set aside at room temperature until ready to serve.
  3. Make the steak: Pat the steak dry with paper towels. Sprinkle the spice rub on both sides of the steak, then drizzle the avocado oil over the steak. Rub until the steak is evenly coated.
  4. Place the steak in the preheated air-fryer basket. Cook for 10–12 minutes, until the internal temperature of the steak reaches 130°F (54°C) for medium-rare (adjust timing based on preferred doneness), flipping the steak halfway through the cook time.
  5. Transfer the steak to a cutting board, and let it rest for 10 minutes. Slice against the grain into ½-inch-thick slices then spoon the warm cowboy butter over the steak.
