Ingredients
for 4 servings
- 60 frozen tater tots (about 1½ pounds)s
- 1 ½ cups chili (homemade or store-bought)
- 1 cup shredded cheddar cheese
- cooking spray
- Optional toppings: sour cream, chopped scallions, pickled jalapeños, and hot sauce
Preparation
- Preheat the oven to 425°F (220°C). Lightly grease a 12-cup muffin tin with cooking spray. Place 5 frozen tater tots in each muffin cup. Bake for about 10 minutes, or until softened.
- Remove from the oven. Using the bottom of a small glass or measuring cup, press the tots in each muffin cup into a cup shape. Return to the oven, and bake for about 10 minutes, or until golden and crispy.
- Remove from the oven, and spoon the chili evenly into the muffin cups. Top evenly with the cheese. Return to the oven, and bake for about 5 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, and let cool slightly, about 3 minutes.Top with desired garnishes, and serve.
